  Anji Flat Leaf (AnJi Bai Cha) - Sedona Arizona's Full-Leaf Tea Store 
Our Anji Flaf Leaf is also called An Ji Bai Cha, or "white tea from Anji" due to its ghostly light green color, but it is really processed and recognized as a GREEN TEA.  It is fairly rare, grown specifically and uniquely in Anji County, Zhejiang Province, at the foot of Tianmu Mountain in southwest China, which is about a 4-hr drive west from Shanghai.  Anji tea leaves are very temperature sensitive, so when picked in very early spring (at between high 60's and just below the average 73°F days), they have less chlorophyll and lighter green color while not absorbing as much sunlight. The leaves also have extraordinary (2-4 times) the normal amino acid levels than usual green tea, giving them the sweetest, most refreshing taste, with the L-Theanine amino acid providing a satisfying and calming effect to the body (some refer to as a tea drunk).  As the daily temperature warms a few weeks later, the leaves turn darker green as it again absorbs sunlight, the L-Theanine level dropping back to normal and become less desirable than that ideal "white tea" period. This is the low production, gourmet, flat leaf, "Dragon" variety of Anji (like Dragonwell), instead of a more common, twisted, feathered leaf "Phoenix" version.

Package size is 1 ounce of full leaf tea, which yields approximately 12 to 13 first cups. Tin size is 2 ounces which yields about 25 first cups. Bulk half pound is available for about 100 cups. The quarter ounce tasting sample is available for about 3 cups.
 
BREWING: Full to heaping teaspoon of leaves (about 2-3 g) for every 6-8 oz of boiling 170°F fresh water. Steep for 2 minutes. Use 190°F for 2 minutes on the 2nd infusion. Up to three more infusions are possible by increasing steep time one minute each time.
